Italian-Ranch Pasta Salad (Sounds like an episode of Fixer-Upper!)
Ingredients:
1 pkg. of pasta noodles cooked al dente (I prefer penne, farfalle, or cavatappi)
1 bottle Italian dressing (not creamy)
8oz. chopped pepperoni
8oz. chopped salami
8oz. cubed mozzarella cheese
8oz. cubed cheddar cheese
½ cup of parmesan cheese (I prefer shaved)
Sm. Can 2.25 oz of chopped black olives
Sm. jar of roasted red peppers chopped
Sm. jar of artichoke hearts chopped
1 pkg. of Hidden Valley Ranch Dip mix
Chopped onions (only if desired)
Cook pasta by directions to suggested time for al dente to keep pasta firm. Once cooked, drain the hot water and rinse with cold water. Get the majority of water out of the pasta and place pasta in a large bowl.
Take all prepared ingredients and add one at a time to the mix. Once all ingredients are mixed well, place the large bowl in the refrigerator for 1 hour. That’s it! The ingredients will marinate together.
It’s the perfect dish to take to any gathering, because it will please most of the people. It’s colorful and everyone will demand the recipe.
